Vegan Orange Cauliflower

Orange Cauliflower with baked Ginger/Lemon Tofu, steamed broccoli and jasmine rice.

  • Ingredients

    1 small head of cauliflower or large cut in half

    1 c flour

    1 c water

    pinch of salt

    Orange Sauce:

    Orange zest from 1 small orange

    1/4 c tamari

    1/2 c sugar (brown if you have it)

    1 tsp. sesame oil

    1/4 c distilled white vinegar

    1/2 c orange juice

    2 cloves garlic minced

    1 tsp. fresh ginger minced

    1/2 tsp. red pepper flakes

    1 Tb cornstarch

    2 Tb water

    Garnish:

    Thinly sliced scallions

    Sesame seeds

  • Preparation

    1. Cut cauliflower into bite sized pieces.

    2. Make batter by mixing the flour, water and salt in a bowl.

    3. Dip each floret into the batter and let excess drip off before placing on a baking sheet lined with parchment paper, make sure they don't touch.

    4. I air fried mine for 15 min. @375 F or you can use conventional oven for 20-25 min. @400 F

  • Make the Sauce

    1. In a pan over medium heat water sauté (1 Tb water in pan) the garlic, ginger and chili flakes for about 2-3 min.

    2. Add the orange juice, sugar, vinegar, and soy sauce.

    3. Turn heat on high and let it come to a boil for 1 minute. Turn heat down to medium.

    4. Make slurry by mixing water with cornstarch and add it to the sauce.

    5. Cook for an additional 2/3 min. till the sauce starts to thicken.

    6. Turn heat off and add sesame oil and about 1/2 Tb of the orange zest and stir.

    7. Toss florets in sauce till they are well coated and serve.

    8. Garnish with scallions and sesame seeds and more zest if desired.
